Whether rampaging ‘bulls’ are in command or it's carnage as ‘bears’ maul their credibility, the City’s dealers and traders have a habit of slipping into Demon, Wise & Partners to celebrate or commiserate. Done out like a 1930s-style vault with soft lights, cosy booths and bronze-toned interiors, it offers something similar to its sister bar, The Hide on Bermondsey Street. Staking a tenner or so on a DWP cocktail is a shrewd investment: Oo-Night-Long (a Japanese Nikka Barrel-laced take on Taiwanese bubble tea), Mexican Whisker (a Tapatio Tequila-twisted Ramos Gin Fizz), and Fountain of Youth (a liquid lemon sherbet and chocolate bonbon spiked with thyme-infused Moskovskaya vodka) are our three insider hot tips. With wine from £28 a bottle and various platters to share, this basement's stock remains consistently high. Note: table service only.
