Chapulin’s Roasted Strawberries and Cream with White Chocolate

This quick and decadent dessert from Chapulin at IHG’s InterContinental Presidente Polanco is a simple way to impress your dinner guests, or simply to satisfy your own sweet tooth.

1.5 kg Strawberries
400g White sugar
120ml White wine
1L Whipping cream
50g White chocolate
Spices (cinnamon, cumin, thyme, oregano)



Wash the strawberries and dry with a paper towel


In a bowl add the whipping cream and 350g of sugar and beat them


Melt the white chocolate into bain-marie


Cook 50g of white sugar and the spices in a pan until it becomes a golden caramel. Add the strawberries and then pour the white wine


In a plate add the whipping cream, then the strawberries and garnish with hot white chocolate
