Cave Hotel in Kent offers a unique concept which pays homage to the homes of our ancestors with a design scheme centred on natural materials, ambient lighting and a rustic feel. The Korean Cowgirl restaurant at Cave Hotel brings together the East and West with a menu that combines East Asian cuisine with America's Deep South. Korean ingredients and Texan cooking techniques fuse to create a selection of delicious dishes designed to delight and sate.
The menu spans lite bites, before focusing on different BBQ meats including ribs, chicken wings, brisket and sharing boards. To start with, though, order some smaller dishes for the table including crackerjack prawns, spicy yellowfin tuna and brisket popcorn. Moving onto heartier dishes and the 'cowgirl meat' section includes pulled pork, Texas-style smoked turkey and smoked brisket, each cooked in offset smokers, fueled with oak and cooked low and slow by the in-house pitmasters.
If you want to try a bit of everything, get a load of the boards which include a taste of Korean fried chicken wings, brisket burnt ends and Korean BBQ sausage, next to sticky glazed baby back ribs and Texas-style smoked turkey. This dish can be ordered alone, or with friends and is an amazing way to taste the best of the menu.
Nodding to East Asian influences on the menu, diners can also expect to dig into the rice bowls which are put together with yang nyum, kimchi, fried egg, rice, spring onions and crispy onions with a selection of toppings from brisket burnt ends to crispy tofu.
In true homage to American cuisine, though, there's also a selection of milkshakes with incredible toppings such as caramelised banana ice cream, toasted marshmallow, whipped cream and cherries on top.
