Each of the chefs has been selected for their expertise, and in order to stay connected to their roots and culinary traditions, they return to their home countries every year to learn new skills.
The a la carte menu takes diners on a journey through Japan, beginning with the chef's collection of seafood. The raw fish sashimi comes in options of tuna, salmon, seasoned grilled eel or a combination including seabass. Sushi rolls include avocado maki with Japanese pickle, vegetable maki rolls and kyuri maki with seaweed and sesame seeds. Three are three miso soup starter options, including shrimp, chicken and tofu. Other starters include hot options of bao bun katsu chicken, vegetable spring rolls and barbecue spare ribs, edamame beans and peppercorn salmon.
The tepanyaki options are vast, as there are several protein options tossed with egg fried rice, stir-fried vegetables and Sapporo sauteed potatoes, cooked with soy sauce and light teriyaki sauce. The chicken comes in options of teriyaki, strips with asparagus, mushrooms and garlic, or with grilled peppers, onions, chilli and soy sauce. Then there's duck breast, with honey, ginger and orange marmalade, chilli lamb, and a land and sea pairing of beef fillet with king prawns grilled with butter.
