At the forefront of Pavilion Bakery is great food, just as it should be. The team and bakers behind Pavilion stand firm that their sourdough bread, pastries and coffee are the very best in East London and Cornwall. The team sources Pavilion's ingredients from nearby suppliers, and some of the very best sustainable farmers and producers, so that you know what you're eating is seasonal and fresh, and are aware of where it's come from.
Pavilion Bakery now has several sites and pop ups, but this one by Broadway Market was the first. It opened in 2014, and is designed to hark back to the days when the Pavilion team sold their bread and bakes at market stalls. It’s light and bright, with shelves packed with loaves, and a counter full of pastry. Every day, the menu features superb baguettes, lunches, pastries and more, and there's always a Sri Lankan dhal on the menu. The menus change with the seasons, but there are some favourites here that Pavilion has become known for.
One of the classics, an almond pain au chocolat, has been treated with the utmost care. The soft centre is made from only the finest organic chocolate and comes surrounded by a crunchy almond crust. The pain au chocolate is then soaked in almond syrup and topped with homemade almond paste before being baked twice to create the perfect crispy coating.
The other favourite from Pavilion Bakery is the cardamom bun. It’s inspired by Pavilion founder Rob Green’s love for Sri Lanka and the iconic Swedish buns that have surged in popularity in the last few years. The recipe is a secret, but it sees gently spiced dough and warming flavours of cardamom and brown sugar combine into a fluffy, sweet, aromatic bun.
