Nishiki opens in Edinburgh’s West End as a new Japanese fusion izakaya from the team behind Yamato. The restaurant brings a Japandi design sensibility to the city, blending minimalist Japanese tradition with Scandinavian simplicity across 40 covers. It offers an all-day format that moves from breakfast through to dinner, with a focus on clean flavours and relaxed service.
The space is light and unpretentious. Wood surfaces sit alongside steel light fittings and panels of thin washi paper. A counter wraps around the open kitchen, and a communal table anchors the layout. Seating is arranged to support both solo dining and informal group gatherings. Lighting remains soft, natural by day and muted by night.
The menu changes throughout the day. In the morning, there are Japanese style breakfast dishes such as French toast with miso caramel, along with onigiri, soft eggs and grilled vegetables. Drinks include premium loose-leaf teas and matcha made from ceremonial grade powder. Later in the day, the offer shifts to small plates in a modern izakaya style, with dishes such as hand rolled sushi, robata grilled skewers, seasonal salads and rice bowls.
The drinks list is centred around a dedicated sake bar, with pours ranging from light and floral to rich and dry. Shochu based cocktails and Japanese whiskies are featured, along with a rotating selection of beers including a house IPA. Wines are chosen to support the food, with a short list of low intervention and classic bottles.
The atmosphere is designed to feel communal but calm. Guests can sit at the counter, the main table or individual smaller tables. Orders are taken informally and the pace of service reflects the tone of the room. The music is low and the setting is intended to suit both quiet meals and easy conversation.
Nishiki is shaped by a preference for consistency over statement. It blends function and atmosphere, serving Japanese inspired dishes in a space that encourages return visits. It is a restaurant that moves with the rhythm of the day and keeps its identity clear at every stage.
