MATER1A is a fine dining restaurant in Notting Hill, offering a highly personal Japanese-inspired tasting experience for just 16 guests. Designed as a space where food, atmosphere and performance intersect, MATER1A is highly immersive and theatrical, as well as offering unique, precise cookery.
The restaurant is led by head chef Victor Garvey, whose culinary career includes years spent working in Japan, as well as at Michelin-starred SO:LA in London. Dishes appear deceptively simple, allowing seasonal ingredients to take centre stage. Dinner is served exclusively as a tasting menu, while lunch offers either a reduced set menu or the full tasting experience. Thoughtfully curated wine pairings are available, alongside a carefully chosen list spotlighting small producers from France, Spain and the US, plus a large Champagne selection.
Signature dishes might include line-caught Atlantic bonito cured in chorizo fat and grilled over binchotan charcoal, langoustine gyoza with duck liver and preserved fig, or duck wing stuffed with wind-dried sausage, black trumpet mushrooms and koji rice. Each plate reflects the same meticulous attention to detail that defines the restaurant as a whole. Many dishes on the menu lean into the theatre of the restaurant, hiding surprises, or taking ingredients and presenting them in different ways (noodles made from tomato water and agar agar, for example).
The interior is entirely handcrafted by a master carpenter, using natural materials to create a warm, cocooning setting. Adding to the sense of occasion, every evening service is accompanied by a live DJ, subtly blurring the boundaries between fine dining and performance.
