Bryn Williams at Theatr Clwyd is a welcome addition to North Wales’ dining scene, bringing thoughtful, ingredient-led cooking to the heart of the newly redeveloped Theatr Clwyd. Led by Welsh chef Bryn Williams, the restaurant is designed as an all-day destination that works just as well for relaxed family lunches as it does for dinners with friends.

Set on the first floor, the restaurant looks out across the Clwydian Range, with generous windows flooding the space with natural light. It’s an easy, inviting room: modern but warm, with an informal bistro feel that encourages people to settle in. There’s also a terrace for brighter days, and importantly, no theatre ticket is required - the restaurant stands confidently on its own.

The kitchen brings together French technique and Welsh produce, with a strong focus on seasonal, local ingredients. Menus run throughout the day, starting with breakfast, followed by lunch and afternoon tea, before moving into pre-show and evening dining. It’s a flexible format that suits different occasions, from quick weekday visits to longer, more leisurely meals.

Starters show a clear emphasis on flavour and balance. A warm Jerusalem artichoke salad with beetroot hummus and crispy chickpeas is both comforting and fresh, while Bryn’s Welsh Black beef croquette arrives crisp and rich, paired with remoulade and mustard mayonnaise. Gin-cured salmon with preserved lemon and cucumber chutney is clean and precise.

Mains are generous and familiar, executed with care. Highlights include a Dingle Dell dry-aged pork chop with roasted pineapple and honey-and-mustard butter, roast chicken with confit leg, bacon and creamed cabbage, and smoked haddock served with crushed new potatoes, a poached egg and champagne velouté. Desserts lean into comfort, with bara brith and butter pudding with vanilla custard sitting happily alongside a poblado coffee crème caramel with coconut and chocolate biscotti.

Design-wise, the restaurant reflects its setting. Warm timber ceilings, clean lines and soft lighting create a calm, welcoming atmosphere, while the views take centre stage. It’s a space that feels considered and easy to spend time in.
