Best-known as the main man behind Primrose Hill veteran Odette’s and also feted as a prime contender on The Great British Menu, Welsh chef Bryn Williams is reconnecting with his roots by opening a new bistro in the multi-million pound water-sports centre on Colwyn Bay promenade. Given the seaside location and Williams’ penchant for fish, we are expecting a big haul of local seafood on the menu alongside cleverly fashioned contemporary meat and game dishes.
