Taking its inspiration from a traditional Mexican fonda, private dining at Fonda offers a treasure trove of traditional, regional Mexican classics. The kitchen is the domain of chef patron Santiago Lastra, who - armed with a comal pan (a traditional clay griddle) - has a unique way of doing things. Located on the ground floor, groups of eight to 10 guests can be accommodated on one table surrounded by greenery and rust-coloured tiling. If your private dining experience at Fonda is due to be a slightly bigger party, you’ll have access to the beautiful, pink-toned dining room. Tucked away, downstairs, and inspired by the atmosphere of Mexico’s late-night bars, this stylish dining room is filled with terracotta tiles, a custom sound system, and contemporary art from Mexico. The dining space, known as Sala Rosa, is perfect for groups of up to 40.
For groups of eight or more, Fonda offers a group dining set menu. Intended for sharing, it starts with sikil pak dip served with totopos and Scottish sea trout ceviche with butternut squash aguachile butternut squash. Elsewhere, the comal section of the menu includes tetelas with chorizo, new potato and hispi cabbage, and the baja tacos with beer-battered Cornish cod and chipotle. For mains, there are dishes of slow-cooked short rib with mole poblano, and hen of the woods oyster mushrooms with smoked pasilla salsa. All mains are served with fresh corn tortillas, refried beans with queso fresco, and pickled vegetables with a jalapeño and honey dressing. Finally, dessert is a corn steamed cake with dates and rich butterscotch.
