Aaron Potter is the chef-owner of Wildflowers, the acclaimed neighbourhood Mediterranean restaurant that launched in Belgravia's Newson's Yard in October 2024. Wildflowers is his first solo venture, and a phenomenally successful one at that, although perhaps not surprising considering his career includes senior positions at two of London’s most prestigious kitchens.
Potter's journey began at just 17 when he became the first-ever Royal Academy apprentice at Trinity to train under Adam Byatt. He spent 10 years working at Byatt's Michelin-starred Clapham restaurant, working alongside culinary heavyweights including Tom Sellers, Angelo Sato and Graham Squire. His rapid progression saw him appointed head chef at Trinity at 25, where he helped secure the restaurant's Michelin star.
He later held a senior role at Phil Howard's Elystan Street, another revered Michelin-starred restaurant, with Howard himself describing Potter as ‘a truly great craftsman.’ Most recently, Potter served as executive chef at the Italian-inspired Maria G's before launching his debut solo venture.
Although very much a special occasion spot, Wildflowers is altogether more casual than his previous ventures, a conscious decision that allows Potter to focus on creating the style of food he enjoys cooking. His precise, seasonal menus feature premium ingredients cooked over fire, with dishes like moules farcies with garlic and parsley butter, and cuttlefish baked rice with crisp pork jowl, and mojo verde.
Wildflowers is co-founded with Potter’s partner - interior stylist and florist Laura Hart - and has already garnered glowing reviews for its beautiful interiors, refined yet relaxed cooking, and genuinely warm hospitality.
The pair have also launched the more casual Bar Flor above the main restaurant. Bar Flor is a natural continuation of Wildflowers below, serving a weekly-changing menu inspired by Italian cicchetti and Spanish pintxos, alongside an extensive wine list.
