Meet the chefs of tomorrow, today

Dan Doherty (above) is a chef on a mission. Not only is he busy running the kitchen at Duck & Waffle, he’s also nurturing young cooking talent with his Chefs of Tomorrow programme, which aims to shine the spotlight on great young chefs via a series of pop-up market stalls at Druid Street Market.

Talented members of the kitchen brigades from top UK restaurants, including Fera, Petersham Nurseries, and L’Escargot in London, will cook a signature dish to serve at the Bermondsey market. One week you might find whole roasted goat from Dan Gibeon of Brighton’s Silo, while the next could be Madeira-braised veal shin with polenta and gremolata courtesy of Alex Dome at Petersham Nurseries. You’ll also be able to pick up delicacies from the market’s regular traders, including Lonzo, Blackhand, F.A.T and more.

These events will take place every Saturday from 7 November to 5 December at Druid Street Market, which opens from 9am-4pm.
