Charitable restaurant Hoxton Apprentice, which trains unemployed, homeless people to work in its kitchen and front-of-house, has recently
gone into partnership with Sviluppo Italia Abruzzo. The partnership will allow 50 of the restaurant’s apprentices to take study trips to the Italian region of Abruzzo, where they can learn about
the regional produce (Abruzzo is best known for its saffron, truffles and pecorino) and the style of cooking.
To celebrate this long-term partnership, top Abruzzian chef, Clemente Maiorano, has created a fabulous Italian menu to be served at Hoxton Apprentice from 6-11 September. Diners are invited to
enjoy the likes of pasta with wild mushrooms and fresh, shaved truffles, and braised leg of lamb in a pecorino and white wine sauce.
