At last Dev Biswal's cooking has a fitting location – a 5 starred hotel in the quaint “Cinque Port” town of Rye. The menu is similar to that of the original in Margate and the small menu of, unique, deftly spiced dishes are works of art and look almost too good to eat on the plate. But you'll be glad you did.
Old favourites such us English Channel sardine, Gressighma Duck and had-crafted chocolate silk are regualr vistors to the changing menu.
The odd tit bits from the kitchen are a delight,too.
The front of house team know their stuff too – marinading is the key – not just to the exquisit flavours, but the
succulent textures . The use of acid graoefruit and pineapple juices are allowed to break down the the meat and fish just long enough to tenderise them, with masking the natural flavours.
