You can count the number of really good restaurants in Cambridge on one hand, which is why the opening of John Hudgell’s Alimentum has been loudly anticipated. The owner-managed approach is particularly welcome, & the modern European cooking sound, constructed from top-notch, local ingredients. Cured herrings, baby leaf salad, beetroot & green peppercorn chantilly is the sort of thing to expect from the starters, with crispy, pressed suckling pig, braised chicory & apple puree or wild sea bass, fricassee of borlotti beans & pepper vinaigrette for mains. The baba au rhum with creme chantilly provides the perfect ending. A short choice lunch & early evening deal is good value at £15.50 for three courses.
