Farmers in the Peak District must love this city-centre deli, cafe & restaurant: its dedication to sourcing locally produced ingredients is plain for all to see. Typically seasonal fare in the daytime cafe might include crayfish & spring onion omelette, or grilled plaice with a herb crust. The residents of Derby have also taken Soul to their hearts, judging by the extra floor of seating that was put in to keep up with demand & the popularity of regular jazz & literature nights. In the evening, specialities from the adjoining deli are used to add a twist to dishes in the restaurant: cauliflower soup with almond & mint pesto & a cheese scone, roast Pollack with Lincolnshire Poacher rarebit & bubble & squeak cake, rib of local beef with sauteed wild mushrooms & watercress puree, for example. A true local hero.
