After the success of the original establishment in Lewes, it was only a matter of time before Bill Collison introduced his fantastic cafe-cum-grocer concept to pastures new. The formula remains the same: to source quality local produce so that the kitchen can make earthy yet wonderful dishes full of bold & well judged flavours. It’s a regularly changing slate of imaginative salads with plenty of herbs, tartlets like smoked salmon (with beetroot, goats' cheese, sunblushed tomato, spring onion & mustard), yummy desserts & cakes plus a good range of home-made juices & smoothies. Be prepared to queue though. The grocery end of the business thrives, too, not only for fresh fruits & vegetables, but also for plenty of own-brand jams & condiments. Open warehouse-style premises (a former bus depot) offer an unpretentious environment, though due to the high demand you are not encouraged to linger. A foodie heaven.
