Mark & Sara Colley’s overhaul of a rundown town-centre inn into an elegant boutique hotel is complete, attracting well-heeled locals & weekending Londoners. The new look works contemporary ideas into the fabric of the handsome 13th century building, & the food follows suit, combining sound English classics with of-the-moment ideas. A fat fillet of fresh cod in beer batter with hand-cut chips & sweet, creamy peas, for example, appears alongside baked fillet of sea bream with sauteed Swiss chard & anchovy-roasted potatoes. Some dishes change with the season, such as slow-roasted pork belly or south coast lobster, & there are posh lunchtime sandwiches & light bites, including a crisp bread pudding filled with creamy leeks, potatoes & Old Sussex cheddar cheese. A buzzing atmosphere is further enhanced by friendly service & a well priced globetrotting wine list.
