The intimate, hushed luxury of the Anouska Hempel-designed Oak Room does nothing to prepare you for the originality of the cooking. There may have been changes in the kitchen – Adam Simmonds has replaced Aiden Byrne as head chef – but perfect pitch has been maintained. Adam earned a Michelin star during his three years at Ynyshir Hall & is all set to repeat that success here, through an innovative menu that could open with terrine of squab pigeon, Comice pear, celeriac, foie gras & salted almonds, followed by sauteed veal sweetbreads teamed with frogs’ legs, cauliflower puree, chocolate oil & anchovy foam, & to finish, poached rhubarb, blackcurrant mousse, custard ice-cream, drop scones & apple foam. This is some of the most exciting food currently on offer outside London.
