Richard Hughes is on a culinary mission to get Norfolk ingredients on the map & to encourage diners to have fun, whether on one of his cookery courses, watching one of his regular supper cooking demos, dining at his luxurious Opitz Room chef’s table just feet from the hotplate, or simply creating a romantic dining experience for two in his 16th-century thatched restaurant. Such is the dedication to the provenance of the produce used in the kitchen, suppliers have their own hall of fame in the bar. With several courses of appetisers & tasters apart from the main three courses, & homemade chocolates to finish, dinner can be real value for money. With a rich complexity to combinations, dishes often feature gutsy flavours - a typical meal might be oak-smoked rare pigeon breast with beetroot, wild mushrooms & truffled leaves, fillet & skirt of Barnard’s Shropham beef, Binham Blue cheese fritter, creamed celeriac, parsley purée & ‘allotment’ carrots, followed by lemon cheesecake crumble, roasted plums, ginger syrup & plum sorbet.
