This airy hotel restaurant lives up to its waterside setting in Brighton Marina by offering a Mediterranean-inspired menu that’s particularly strong on seafood, so expect bouillabaisse, sea bass with red wine risotto & fennel cream or roast monkfish with Puy lentils, oxtail & pancetta stew. If you want to cast your net wider, start with carpaccio of beef, then move on to venison with celeriac fondant & fig tarte tatin, & finish with cinnamon clafoutis with roasted pear sorbet. Should you wish to prolong the evening, head to Black & White’s cocktail bar for a digestif.
