Edinburgh's Sheraton has given Santini a third outlet in addition to London & Milan. But, discreetly housed on the ground floor of the Terry Farrell-designed extension to the rear of the building, you would never guess you were in a hotel dining room. Ristorante Santini has an independent aura & sleek design, & the wine list is exclusively Italian with around 15 choices under £25. You don’t have to eat four courses, Italian-style, but if you do, dinner might include nicely roasted scallops with avocado, crab, herb & citrus salad to start, a manageable primi of tagliatelle alla pesto, roasted organic salmon with salad nicoise at main, & a dessert such as magnificent white chocolate ice-cream.
