The Brighton branch of this popular mini-chain combines all the best features of its established siblings – honest food, great wines & chic bedrooms – with a quirky location within gothic-styled buildings in ‘The Lanes’ area, just off Brighton’s seafront. As ever, a daily-changing bistro menu offers French classics (coq au vin, chateaubriand with pommes frites & bearnaise) alongside more modern concoctions (organic salmon, Salamanca lentils & chorizo with salsa verde), with a well-sourced list of wines to match. Great for a weekend away, but remember to book early for the sell-out special events, when dinners are combined with wine talks & tastings.
