Set amid 123 acres of Surrey parkland close to Ascot, Sunningdale and Wentworth, this stunning country-house hotel is also home to Michael Wignall’s two-Michelin-starred Latymer Restaurant. We reckon he’s on stupendous form at the moment, treating diners to a procession of exhilarating, unpredictable creations and dramatic assemblages – perhaps loin of Loire Valley rabbit served with confit egg yolk, Monmouthshire ham, morels, cabbage ‘glass’ and ‘bois boudran’ sauce or lightly salted cod with roasted scallop, Ibérico lardo, textures of cauliflower, scallop and charcoal emulsion. This is “innovation at its purist”, notes a fan of Wignall’s highly involved cooking. There’s also no holding back when it comes to desserts such as Gariguette strawberries with peanut powder, warm doughnut, espuma, strawberry jelly and sorbet.
