Set amid 123 acres of Surrey parkland, this stunning country-house hotel boasts its own golf course, a vast spa and fabulous rooms – not to mention the two-Michelin-starred Latymer Restaurant. Readers have noted some ‘dissonance’ between the ‘Henry VIII’ surroundings and the uncompromisingly modern cooking – but there’s no denying that chef Michael Wignall is on dazzling form. Diners are treated to a succession of exhilarating, unpredictable creations presented in clusters on dramatic plates – perhaps a mosaic of Goosnargh duck and chicken with shavings of marinated foie gras, Jerusalem artichokes, truffle dressing and Asian-style duck tongues or a gentler combo involving two cuts of hare, chanterelles, Brussels sprouts ‘choucroute’, poached pear and parsnip cream. There’s also no shirking the on-trend themes when it comes to desserts such as kalamansi (citrus fruit) parfait with yuzu ganache, nitrogen chocolate, compressed banana and lemon-baked meringue. The fine wine list provides a perfect liquid match, and the professional front-of-house team does its job admirably.
