Set amid 123 acres of Surrey parkland close to Ascot, Sunningdale and Wentworth, this stunning country-house hotel boasts its own golf course, a vast spa and fabulous rooms – not to mention Michael Wignall’s two-Michelin-starred Latymer Restaurant. He’s on dazzling form at the moment, delivering delicate, flavourful dishes packed with refined, intricate flavours. Diners are treated to a succession of exhilarating, unpredictable creations presented in clusters on dramatic plates – perhaps loin of Loire Valley rabbit served with confit egg yolk, Monmouthshire ham, morels, cabbage ‘glass’ and ‘bois boudran’ sauce or lightly salted cod with roasted scallop, Ibérico lardo, textures of cauliflower, scallop and charcoal emulsion. There’s also no holding back when it comes to desserts such as Gariguette strawberries with peanut powder, warm doughnut, espuma, strawberry jelly and sorbet.
