Chef Martin Wishart has held a Michelin star since 2001, & standards are still sky high at his eponymous restaurant on Leith waterfront. Inside, the decor tastefully chic & service is arguably the best in the city. From the seasonally changing menu you could start with quail & sautéed foie gras with wild mushroom ravioli & bouillon, before tackling a hunk of char-grilled, acorn-fed Ibérico pork with minted peas & runner beans, pork-skin popcorn & sour cherry sauce. After that, a dessert of raspberry soufflé with yoghurt pannacotta might beckon. There are also two tasting menus, including one for vegetarians offering the likes of asparagus flan with a fricassee of peas or Emmental soufflé with spinach soubise. The wine list is a top shout too. Wishart has also opened a cookery school, put his name to the flagship restaurant at Cameron House Hotel, Loch Lomond, & recently launched Honours – a brasserie in central Edinburgh.
