The light, airy interior and eye-catching view over Borde Hill gardens makes for elegant dining surroundings in this acclaimed local restaurant. Friendly staff serves contemporary dishes from a kitchen with classical foundations. Seasonality is everything. Expect starters of Jerusalem artichoke and autumn truffle risotto, or local mallard duck with sweet potato and ginger puree and Amontillado sherry jus, followed by Rye Bay red mullet with autumn truffle gnocchi, spinach and sauce vierge, and whole roast Balcombe partridge teamed with braised red cabbage and orange and sage jus.
