The formula here is simple and effective: one self-assured chef-patron; a clean, inspired, Italian-influenced menu; a pretty thatched pub & an enterprising list of wines. The cooking is graceful, the menu featuring dishes such as hand-rolled pasta stuffed with roast squash, ricotta, garlic & parmesan with sage butter & crushed amaretti, or roast cannon of lamb, liver & kidney with a tomato, red onion, garlic & thyme tart & a green bean, parmesan & black olive sauce. Few restaurant wine lists of around 100 bins have such an eclectic & stimulating selection at such affordable prices. All in all, a most civilised prospect.
