Square Meal review of Tides Restaurant: 
Michael Bates, from the Celtic Manor hotel in Newport, has replaced George Fuchs at the stoves at Rocco Forte’s stylish Cardiff Bay hotel & spa. His cooking is underpinned by a commitment to quality ingredients, many of them Welsh (roasted rack of Welsh lamb with Red Dragon mustard crust, baked onions, green beans & creamed potatoes & Welsh pork belly with prunes & dried apples in caraway jus, walnut noodles & savoy cabbage, to name just two), with the emphasis on upmarket comfort food. The waterside setting is a treat & the minimalist design will appeal to many, although some find it on the impersonal side.
