Square Meal Review of The Restaurant at Bath Priory Hotel
Only a mile from the city centre, Bath Priory is the epitome of English country-house comfort – all velvet lawns, well-stuffed sofas, gilt-framed portraits and cosseting staff. Michael Caines (of
Gidleigh Park and ABode Hotels fame) oversees the kitchen, with head chef Sam Moody delivering the goods in creative, confident style – no wonder the Priory picked up a Michelin star in 2012.
Sourcing and timing are admirable, and ideas are well considered – witness langoustine cannelloni with sauce vierge and an intense langoustine bisque, sea bass with parsnip and ginger purée,
vanilla and chicken jus or a plate of Tamworth pork (crispy rillette, confit belly, braised shoulder, roast fillet) served with butternut squash, caramelised apple and paprika jus. Desserts such as
buttermilk set cream with fig palmiers, honeycomb and sherry-roasted figs are also beautifully balanced. The brilliantly researched wine list deserves lengthy scrutiny.
