Square Meal review of Ramsons:
Chris Johnson’s love affair with Italy remains undiminished, & he is nothing if not fanatical about sourcing top-quality, seasonal ingredients. Ramsons is one of the few restaurants in the UK to have produce delivered directly from the Milan wholesale market. Even the flour for the wonderful in-house bread comes from Italy. Johnson has two highly talented young chefs on board, both able to transform the raw materials into an Anglo-Italian menu of considerable sophistication, featuring dishes such as roast pork ravioli with deep-fried sage leaves and basil oil, or carnaroli rice risotto with carroty and melting Taleggio cheese & pan-fried fillet of plaice with sauteed samphire and brown shrimp sauce. Pannacotta makes a traditional finish but there’s also English custard tart with nutmeg ice cream. The cooking is matched by an all-Italian wine list of equal fascination & service that is attentive, informed & personal. It may be pricey, but my goodness, you get what you pay for.
