Previously at Le Gavroche, it comes as no surprise that Brian Maule's solo venture draws heavily on classical French traditions. Since opening in 2002, Maule has established himself as one of Glasgow's big hitters serving dishes such as confit pork belly, fried squid with chick peas, saffron butter, or a tasty ragout of smoked salmon, clams & wild rocket to start, while canon of lamb fillet with crushed peas, a hint of mint & deep fried parsnip crisp, or poached halibut, braised octopus with confit shallot in red wine are typical mainchoices. To finish the might be a tangy citrus tart with a rhubarb sorbet, or a text book baked chocolate fondant with vanilla ice cream. Coming from Ayr, Maule is keen to use as much Scottish produce as possible for his French with a twist dishes.
