Michelin-starred chef Nigel Haworth has won great acclaim & continues to give Lancastrian produce a good name with his updates on classic regional recipes. Thus, a deeply modish-sounding dish of black pudding with buttered pink trout, mustard & nettle sauce turns out to be a bona fide 18th-century recipe, while partridge comes wrapped in buttery puff pastry alongside autumn truffles, roots & salsify fritter.
