The exact amount of money spent on modernising the Sheraton Grand is open to speculation, but much of it was clearly lavished on remodelling its dining experience. What was a rather traditional grill room has been transformed into a swanky new all-day bistro overlooking Festival Square and Edinburgh Castle. The result is a super-contemporary, colourful and fairly minimalistic space that looks like a fusion of Missoni and IKEA, with the bonus of a vibrant alfresco terrace and a bar boasting more than 50 gins. Food-wise, expect plenty of imaginative Brit-accented stuff, ranging from wood pigeon and pear salad with Stornoway black pudding to venison Wellington, sea bream with roasted beetroot purée, fennel and orange or marsh duck breast with kohlrabi and plum chutney. It’s not cheap, but One Square neatly manages to cater for business guests and locals alike.
