Square Meal Review of Ormer ?

Celeb chef Shaun Rankin gained a Michelin-star at swanky Bohemia, but is now making waves at this standalone restaurant in St Helier’s historic centre. Named after one of the Channel Islands’ most treasured seafood delicacies – a rare bivalve also known as the ear shell or abalone – Ormer showcases Rankin’s highly innovative cooking and his fondness for Jersey produce. Royal Bay oysters might appear with parsley soup, crispy oyster, pickled cucumber and oyster leaf, while turbot is matched with lamb shoulder, pearl barley, seaweed ragoût and shallot flavours. Meanwhile, meat fans might fancy pork belly with white cabbage slaw, cockles and a forager’s feast of alexanders, wild fennel and sea beet. Martin Brudnizki’s design has created a sophisticated blend of bespoke furnishings, aged leather, silk wallpaper and distressed oak panelling, as well as a private dining room and a cigar terrace/roof garden upstairs.
