Never mind that this is a hotel dining room, the ever-popular Samphires Restaurant is far removed from corporate anonymity; it also boasts sweeping views across the Gower Peninsula and Carmarthen Bay. The kitchen focuses on modern European cooking with a strong local accent, and dishes are generally well executed. Kick off with Perl Las cheesecake served with warm buttered asparagus tips, ahead of roast saddle of salt marsh lamb with roasted root vegetables, dauphinoise potatoes and a port and elderberry jus or lightly poached fillets of sole véronique with sprouting broccoli and chive-buttered King Edward potatoes. This is also a lovely spot if you fancy watching the evening sun do down, with friendly staff on hand to enhance the mood.
