There's more to Brighton Marina than chain eateries, ten-pin bowling & shopping in Asda. Admittedly not much more, but the restaurant at Hotel Seattle is an outpost of style & sophistication in this otherwise soulless enclave. Striking red leather chairs & exposed steel ducts blend with vintage chandeliers & colourful modern art in the dining room, although the main draw is the light & airy conservatory – complete with a terrace overlooking the marina itself. The menu ventures beyond steaks, risottos & other hotel standards to take in novel ideas such as salt beef stovies (a Scottish ‘leftovers’ dish) or a riff on ‘surf & turf’ involving pan-fried chicken & scallops. The inventive approach extends to groovy cocktails in the cosy bar: try pink mountain top – a blend of Tanqueray 10, blueberries & ‘forest fruits’.
