Ron Faulkner is the man behind Ronnie’s in Thornbury – a destination restaurant in a market town north of Bristol. Now he's making waves in the city with young head chef Dave Underwood. A key feature of his new venture is the chef's table surrounded by overhead TV screens showing what’s happening in the kitchen. Under its previous owners, the Muset was famed as one of Bristol's first BYO restaurants, so Ronnie has played along with the tradition, allowing diners to bring in their own wine for the tasting menu. Eclectic modern dishes dominate the menu: starters such as pork belly carpaccio with smoked eel, horseradish & apple could precede lamb with leek fondue, olives & anchovy or rabbit loin & pie with sherry lentils, beetroot & fromage blanc. Save space for dessert, perhaps a deliciously light apple parfait with iced tea, granola & honeycomb.
