Much depends on the talents & enthusiasm of chef/proprietor Dev Biswal, whose innovative culinary approach yields a steady stream of thrilling modern Indian dishes based on high-quality, local ingredients – consider fillets of English Channel sardine with carom seeds & ginger or gently flavoured, stir-fried Ramsgate crabmeat with an aromatic crab jus involving mustard oil & spices. Alternatively, try something more robust – perhaps slow-cooked Kentish minced beef with organic cracked wheat, served alongside a beef ‘cake’ flavoured with rose petals, cloves & cumin. Finally, round things off in stunning style with chocolate samosas accompanied by a creamy cardamom sauce. Needless to say, this is no place for the late-night lager crowd
