Looking for Australasia? Head for the glass prism. The statement entryway leads down to a subterranean restaurant & bar with an airy feel & a lack of Oz cliché. A drink with dinner is more likely to be iced water infused with kumquats & galangal than a pint of fizzy lager. It’s a big room with plenty of buzz; be seen in one of the cushioned booths or hide away in a semi-private alcove towards the back. Food has strong pan-Asian influences & employs some whizzbangery, so good sushi might be followed by a salmon salad served under a smoke-filled cloche, roast barramundi, or chicken with a foie-gras foam. The house special dessert is an eggy mango soufflé with coconut ice cream. An Australia-dominated wine list is delivered to your table on an iPad which, sadly, they’ll want back once you’ve ordered.
