Touted as one of the ‘greenest’ hotels in the land, this boutique retreat in the centre of Bournemouth lives & breathes sustainability. No detail have been left to chance when it comes to environmental friendliness (note the organic goose down in the duvets), & the venue’s ‘eco cred’ also extends to the food served in the Green Room restaurant. Local sourcing & seasonality are the kitchen’s watchwords, & the short menu shows its mettle with the likes of pork belly beginet with Bath Pig chorizo, cherry tomatoes & ‘Easter egg’ radish or roast line-caught turbot with purple potatoes, English peas, tomatoes & beetroot leaves. To conclude, perhaps a mischievous combo of chocolate ’barley’ with salted caramel & cornflake-milk ice cream. Naturally, the wine list is totally organic/biodynamic (with full attention paid to carbon footprints), & the bar is well stocked with local beers & organic spirits.
