In fact, Buxted Park’s self-styled Dining Room sports a surprisingly restrained, modern look. The kitchen specialises in bright flavours & fresh accents, perking up pan-seared scallops with a warm apple and chorizo salad, crisp pancetta and cider glaze. Elsewhere, it reverts to its European home patch for the likes of Sussex lamb two ways with dauphinoise potatoes, pea fricassée and butternut purée or fillet of beef, Salardaise potatoes, wild mushrooms and baby spinach.
