The Gingerman continues his march through East Sussex, with the recent addition of a rural gastropub to make this a four-strong empire, but the quality of his finer dining operation at this elegant boutique hotel stands firm. The Given the restaurant’s proximity to the sea, the modern European menu is surprisingly evenly divided between surf and turf, with both impressing in equal measures. To start, pretty little platters offer salmon gravalax with fluffy horseradish cream and home-made potato scones, or confit duck terrine with a stack of sourdough toast and a sticky prune chutney. Mains include favourites – a robust rib eye steak with no-nonsense potato rosti, spinach, roast shallots and a rich red wine sauce, for example – but it’s the more imaginative dishes such as fillet of wild sea bream with pearl barley and tomato risotto, Parma ham and smoked cod roe tortellini that allow the kitchen to show its flair. Breezy but knowledgeable staff ensure that the intimate basement dining room doesn’t feel too hushed, and they’re happy to recommend wines from a list that includes local bins.
