Set in 840 acres of expansively formal French gardens & rolling parkland, gilt-edged Adare Manor looks mightily impressive with its palatial architecture, championship golf course & spa. Formal meals are served in the elegant, panelled Oak Room Restaurant overlooking the grounds & the meandering River Maigue. Carefully sourced local ingredients are used to telling effect in dishes such as oysters four ways (chilled, tempura, poached, glazed) & medallions of rabbit & black pudding with seared scallop, parsley mash & shallot cream, while local line-caught sea bass is roasted with braised fennel then served with confit garlic gnocchi & sauce dugléré. The wine list is a wide-ranging slate.
