Samuel's at Swinton Park

The ancestral home of the Cunliffe-Lister family is a stunning 30-bedroomed castle hotel set in 200 acres of Yorkshire Dales parkland with lakes, rivers & moorland. A more manageable four-acre walled garden supplies much of the restaurant’s fruit, vegetables & herbs. Chef Simon Crannage creates modern British dishes along the lines of a ‘sphere’ of pork & barley with turnip fondant, cider reduction & apple chutney, or fillet of brill teamed with Asian spiced pork belly, followed by braised local beef with pithivier of mushrooms, foie gras & roasted roots. Classic lemon tart with raspberry sorbet or rosemary-scented pannacotta with honey-roasted pear & chocolate sauce are typical desserts.
