Gillies Bar & Grill features log fires, beams and stone walls, plus traditional Irish food with the emphasis on local ingredients. In the fine dining River Room, panoramic floor-to-ceiling views of the gardens are the backdrop to starters such as warm salad of pork, picked apples & lentils or lasagne of Iberico ham, langoustine & chestnut emulsion. Mains might include roast & poached pigeon with essence of prunes & foie gras, or Venison loin cutlet, sautéed sweetbreads & mead syrup. Bitter chocolate délice with pine kernel ice-cream makes a good finish.
