When James Fairfield-Dickson took over the revamped kitchens of this long-standing hotel in the fishing village by Chichester Harbour, he & his 10-strong brigade replaced dated 1980s food with something more modern & up-to-date. Starters such as wild mushroom blinis with black truffle salad, red mullet terrine with garlic aioli & smoked duck breast with soba noodles vie for attention alongside pheasant with a lentil cream & marinated venison with a pear tarte tatin. Fish is big here, too. The charming restaurant overlooks the hotel’s gardens, service is polished, & there’s a comprehensive globe-spanning wine list.
