Raise a glass to the late David Collins in one of his design studio’s most striking pieces of work, The Langham hotel’s glamorous bar. The imposing but ornate ‘Chinese Chippendale’ cabinets hold an impressive range of spirits, including enough grog to justify the self-applied title of ‘the poshest rum shack in the world’. Amid mulberry tones and butterfly motifs, award-winning mixologist Alex Kratena perfects drinks such as the Langham martini – ice-cold Tanqueray 10 gin and a choice of five vermouths served in a silver ‘glass’ with olives (neatly marinated in 10 botanicals) on the side. It’s not all serious, though: retro flights of fancy include a take on piña colada employing a slush machine and a machete. In a bar named after a pure, deep well that once supplied the hotel, you’d be mad to stick to water.
