Square Meal Review of Theo Randall at the InterContinental Hotel ?

River Café alumnus Theo Randall has ‘celeb chef’ credentials these days, and his restaurant at the InterContinental is now serious business for the foodie cognoscenti. The ‘muted’ hotel dining room may lack the buzz of the aforementioned Hammersmith icon, and prices are emphatically Mayfair for straightforward assemblies of simple-sounding ingredients, but the flavours are stunning and we agree with those who say the kitchen ‘never disappoints’ – witness the sweetest Devon crab paired with explosively ripe datterini tomatoes, samphire and Sardinian bottarga. Pasta is a highlight: taglierini with peas, prosciutto, mint and Parmigiano Reggiano makes you wish you had Randall’s suppliers on speed-dial. And the chef knows how to stoke his wood-fired oven as well as any Tuscan villager, producing skewered scallops and monkfish on rosemary sticks, as well as a legendary Limousin veal chop. Puds tweak the classics (lemon tart, pannacotta), there are good-value lunch deals and the Italian wine list keeps its prices in check.

    So as it was my turn to pick, I decided on something that I knew TBH (The Better Half) isn’t all that keen on but that I absolutely love, a good Italian restaurant! And for me, there was only one – THEO RANDALL at The Inter-Continental. I’ve been watching Theo on Saturday cooking shows for a while and I just love his approach to cooking. It’s all about quality and using the best ingredients to create the most perfect dish. Simplicity is also key and you won’t find a million different ingredients in his dishes. What I love most though, is that Theo Randall is not just a name above the door, like so many other “celebrity chefs”, but that you’ll find him running the pass and getting out and talking to his customers on any given service. I had the pleasure of meeting the man himself on the night we went and I have to say, what a charmer! He really took the time to talk to all of us and by the time he left our table, he had us all swooning!...

Theo Randall at the InterContinental Hotel’s Chef - Theo Randall at the InterContinental chef Theo Randall Acknowledged as one of the most seasonally attuned chefs in London, Theo Randall started his career at Chez Max in Surbiton in 1986, & moved to Hammersmith's River Café in 1990 for an initail three-year stint, before taking year out to work at Alice Water's legendary Chez Panisse in Berkeley, California. Following his return, The River Café gained a Michelin star in 1997. Randall left The River Café in 2006 after many years as head chef & partner. He spent the summer of that year travelling through Italy & France, sourcing ingredients for his new restaurant at The InterContinental on Park Lane, which opened in late 2006, winning Best Italian Restaurant at the 2008 London Restaurant Awards.
