The fact that the Hyatt Regency’s capacious, high-ceilinged restaurant is attached to its lift & lobby gives it an uncanny resemblance to a Las Vegas hotel gaming floor. Of course, an air of expensive Britishness is key to the appeal it clearly holds for an international crowd; afternoon tea goes down well among the marble columns & chandeliers. At dinner, the open kitchen comes into its own, sending out Devon crab bisque with smoked bacon followed by slow-cooked veal belly with purple carrots & wild-garlic mash.
