Despite the ‘wow’ created by its overtly grand Royal Exchange setting, Sauterelle still feels like an insider tip complete with a charmingly clubby vibe. The cooking is ‘fab’, inventive, economical, fresh & light, with vegetarian & tasting menus covering most bases, & creative flourishes also surfacing on the bargain set menu (£20/23.50 for two/three courses). Cornish mackerel ceviche is prettily adorned with herbs, fennel ribbons & pale-pink beetroot shavings, while the richness of melt-in-the-mouth ox-cheek is cut by the earthy astringency of bulgur wheat with parsley. Desserts such as basil tapioca with lemon sorbet & olive caramel maintain the momentum without overloading the calories. The compact wine list has its requisite contingent of pedigree Burgundy & Bordeaux, without hitting the financial stratosphere. Sauterelle shows its bullish City side at lunchtime, but relaxes considerably in the evening.
